Many people modify thier seating arrangements. Most changes are due to a poor fit or a general lack of comfort. Lowering the seat will give you better stability and a stronger righting moment, but will effectively raise the cockpit coaming increasing your layback difficulties and possibly affecting your paddling mechanics as well. Actually moving the seat position is another matter. I tried moving my seat forward less than 2 inches (no sawing required) which resulted in a SIGNIFICANT change in the boat's handling characteristics (not for the better). I moved it back. Before taking a Sawzall to your boat, consider all the possible ramifications. Are you going to actually paddle the thing or just roll? There are numerous rolling techniques that will get you upright and breathing in a jiffy without having to lay way back. If you want to seriously pursue Greenland style rolling, a different boat might be in order. If not, stick with what you've got, and try some different or modified rolling methods. I've learned to roll a bunch of different ways easily without a good layback. So can you. Good luck.
