One reason for leaving some weather cocking inclination in is that kayaks (in my experience) tend to weather cock less an less as the wind blows harder, and eventually can end up lee cocking. I've even seen my explorer do this. A little weather cocking in light wind is a small price to pay for a well-balanced kayak when the wind is up.
